Inspired by Burgundian winemaking, winemaker, Nico Grobler, has dedicated this project solely to Pinot Noir, produced from Elgin fruit. This flagship Pinot shows a focused palate of red fruit, a bright acidity and tertiary notes of mushroom and forrest floor. Destemming and the berries cold pre-soaked for up to 15 days before fermentation, ensures incredible purity and concentration of fruit as well as gentle extraction of colour and tannin. With only gentle punch downs twice a day, the resulting tannin structure is one of great elegance and finesse. 12 to 14 months of barrel age in 300L barrels, as well as 12 months in bottle before release, ensure that this Pinot is beautifully integrated and showing the great finesse intended.
