The Paul Cluver Dry Encounter Riesling is pale in appearance, with a stunning green apple-coloured nuance to it. On the nose, apple blossom, green apple, fynbos honey and beeswax aromas are apparent. The crisp, clean palate is lemon sorbet-like, holding more weight than anticipated. There is good interaction between the acidity and residual sugar. Although the wine is quite controlled, it also shows a nervous character, so typical of Riesling. A powerful mineral backbone creates structure and gives way to a persistent finish. Try it with gorgonzola or pan-fried paprika prawns.
