Vinification: Decomposed granite soils. Wholebunch pressed and left to settle lightly for 24 hours. Naturally fermented in older French oak and kept on primary lees for 10 months. Hand-off approach. Tasting notes: Ripe stone fruit, spice and some granite reduction. Beautifully balanced. Great ageing potential.
