Selected apples were picked very late, by end of May 2008, and were then pulped through a crusher and pressed in an old cloth and basket press. The juice was fermented for a couple of weeks and aged in old Burgundian casks for one year. After a year in casks the apple juice and yeast were bottled under crown caps for the secondary fermentation. This is therefore a true bottle-
fermented product. The bottles were left for 8 years on lees and “disgorged”, topped up without any dosage and placed under cork in May 2016. The 2008 Volksvreemd Cider is a product of time, it requested infinite detail and it gave us the opportunity to do something different. We are very proud of this offering and only wish we had made some more bottles 8 years ago.
