The Signature Red, the Columella, is a wine with immense promise as it was aged for 1 year longer in cask and tank prior to the bottling. The Columella has a deeper colour and concentration, but still very compact and in need of some ageing, already showing great complexity in the aromatics coming together of many aspects.
The aromas are a combination of bright red fruit which pass over to riper black stone fruit, while it is also very earthy and seems to live on a bed of freshly ploughed earth. Then there is the appearance of the much darker graphite aromatics as well.
The texture is compact and need time, ageing 12 months in barrels (8% new) and thereafter an additional 12 months in old, big oval casks. Bottling is direct from the cask and the philosophy is to have minimum impact on the character of the grapes and let the fruit express itself.
